1. Making traditional kimbap with STAVI office catering

Ingredients for traditional kimbap:

  • 225g cooked white rice

  • 4 sheets of seaweed

  • 2 cucumbers

  • 1 carrot

  • ½ tablespoon chili sauce

  • ½ tablespoon mayonnaise

  • 5 sausages

  • 3 chicken eggs

  • 1 tablespoon fish sauce

  • 1 tablespoon seasoning powder

  • 3 stalks of spring onion

Preparing the ingredients:

First, peel and wash the carrot and cut it in half so it cooks faster. Then put the carrot in a pot and boil for about 15 minutes. Be careful not to boil it too soft or it will be hard to cut; once cooked, slice the carrot into long strips.

Choose straight, fresh cucumbers to keep them crisp and sweet; wash them and cut them into thin, long sticks about the same size as the carrot.  

Lightly fry the sausages, then cut them into long sticks as well. Arrange the cucumber, sausage and carrot on a plate.

Crack the eggs into a bowl, add 1 teaspoon of fish sauce, 1 teaspoon of seasoning powder and chopped spring onion, then fry into thin omelettes. When the egg is just cooked, flip it, then transfer it to a plate and slice it into long strips about half a finger wide.

Rolling kimbap the easy way with STAVI:

Once the ingredients are ready, it is time to roll the rice. Lay a sheet of seaweed on a plate and spread the rice evenly over it. Next, place the sausage, cucumber, carrot and egg one after another in the middle of the rice. Then roll it up tightly into a cylinder and cut it into bite-sized pieces.

  • 100g cooked white rice

  • 50g beef

  • 2 sheets of seaweed

  • 150g wheat flour

  • 1 packet of breadcrumbs

  • 2 eggs

  • 1 tablespoon white sesame seeds

  • 1 tablespoon sesame oil

  • 1 carrot

  • 1 cucumber

Preparing the ingredients:

Wash the beef and slice it thinly, marinate it with a little seasoning powder and oyster sauce, then grill or stir-fry it as you like. Once cooked, cut the beef into long strips for rolling the kimbap. Peel and wash the carrot, then boil it for about 10 minutes; once cooked and cooled, cut it into long bite-sized pieces.

Choose a young, straight cucumber, wash it and cut it into long strips just like the carrot. Once the white rice is cooked, fluff it up and scoop it into a bowl, then mix it well with 1 tablespoon of sesame oil and 1 tablespoon of toasted white sesame seeds.

Rolling and frying crispy kimbap with STAVI:

Have a bamboo rolling mat ready and place a sheet of seaweed on top, then take about 50g of white rice and spread it evenly over the seaweed. Next, place the beef, carrot and cucumber one after another along the edge of the rice, then roll it up slowly by hand and press firmly.

Mix a little wheat flour to coat the kimbap: cover the rice roll with flour, then dip it in a layer of beaten egg. Roll the kimbap in breadcrumbs and deep-fry it in cooking oil. Heat the pan of oil and fry slowly until the kimbap is evenly golden and fragrant, then turn off the heat.

3. Making vegetarian vegetable kimbap with STAVI office catering

Ingredients for vegetarian vegetable kimbap:

  • 1 carrot

  • 1 cucumber

  • 200g king oyster mushrooms 

  • 2 bowls of cooked white rice

  • 4 sheets of seaweed

  • 200g good-quality corn

Preparing the ingredients:

Cook the rice slightly sticky and, while it is still hot, add a little sesame oil, a pinch of salt and toasted sesame seeds to bring out the flavor.

Wash the cucumber, carrot and baby corn and let them drain; boil the carrot until cooked, then slice everything.

Rub the king oyster mushrooms with salt, then rinse them with water, squeeze them dry and tear them into strips. Marinate the mushrooms with a little sesame oil, seasoning powder, oyster sauce, pepper and sugar for about 7 minutes. Sauté some onion until fragrant and stir-fry the mushrooms for about 3 minutes, then turn off the heat.

Rolling vegetarian vegetable kimbap with STAVI:

Lay the seaweed on a bamboo mat or a clean flat surface, then spread the rice evenly over the seaweed, and add the cucumber, baby corn and julienned carrot on top one after another.
