What determines the price of industrial catering?
The price of industrial catering (usually ranging from VND 25,000 to over VND 60,000 per meal) is calculated by providers by balancing the actual component costs against nutritional requirements. It is a cost level agreed between the employer and the catering provider and depends on 5 main factors:
Input ingredient costs: this is the most important factor determining the cost of a meal (60–70%). It includes the price of food, seasonings and so on, because this factor always fluctuates with the market, the season and supply at each point in time. Different price levels determine the quality and variety of the dishes.
Nutritional portioning and the nature of the work: portions are adjusted according to age, gender and the nature of the work (manual or mental, heavy or light labour) to ensure the necessary energy. For businesses with light work, they will only prioritise meals at a moderate price suited to the job. Workplaces with high intensity that demand greater nutrition, such as mechanical engineering or transport, will prioritise higher-priced meals in order to safeguard labour productivity.
Operating and labour costs: for a meal to be completed and reach the diner on time, a highly skilled kitchen team and modern equipment systems are needed. All of this is counted within general operating costs; although these amounts are not shown directly on the meal tray, they are the underlying factor that determines service quality.
Contract scale and duration: contracts ordering large quantities and signed for the long term usually receive a more favourable price because production costs are optimised. Large packages can deliver lower-priced meals because costs overlap. For kitchens serving small numbers, the cost per meal is usually higher because it is difficult to optimise fixed costs such as staff, equipment and operations.
Specific service requirements: if cooking directly in the customer’s kitchen, costs can be optimised on transport, but additional costs arise for organising operations on site. If cooking at a central kitchen and transporting to the service point, the provider needs to invest in a fleet of specialised vehicles, heat-retaining equipment and delivery staff to ensure the dishes are still piping hot and tasty when they reach the diner.
In addition, several other factors also partly affect the price of a meal, although those costs are not clearly shown. Each business will base itself on the particular nature of its own work to set a suitable meal price, after which the catering provider will take it up and draw up a sample menu and operating plan in order to conclude the contract.

Meals from VND 25,000 – 30,000 per meal: This is the price level chosen by many businesses because the meal is more generous and more nutritious. At this level, the catering provider is in a position to choose quality ingredient sources, ensure meal portions and diversify the menu.
Meals from VND 35,000 – 40,000 per meal: This price level is in a higher segment and is typical of businesses with good welfare provision, providing meals for workers doing heavy work, for engineers and for office staff. Meals at this price level are usually of high quality, with a rich menu and larger portions, and the requirements for hygiene and safety are also stricter.
Meals from VND 45,000 – 55,000 per meal: This is the price level common today among office-based groups such as banking, IT and specialists. The upgraded menus include several main dishes and larger portions, are served on site and use 100% fresh produce.
In addition, STAVI is also rolling out special meal packages for athletes from VND 70,000 to 80,000 per meal. For these meals, nutritionists and the relevant departments build the menu and calculate the specific portions of each dish to ensure athletes maintain their best physical condition.
