How to cook braised pork with quail eggs
Step 1. Prepare and marinate the pork
To remove any odor from the pork belly you have bought, wash it with diluted salt water or rice water, then rinse with clean water and drain. Next, use a knife to cut it into bite-sized pieces.
Wash the quail eggs too, then put them in a pot and boil for about 7 - 10 minutes until cooked. Once cooked, wait for the eggs to cool and peel them. Then rinse the eggs once more in clean water to remove any bits of shell still stuck to them.
Step 2: Marinate the pork
Put the pork in a bowl and marinate it with crushed and finely chopped shallots, 2 tablespoons of fish sauce, 1 spoon of seasoning powder, 1 spoon of chili sauce, 2 spoons of sugar, and ½ spoon of MSG. Mix all the seasonings well and leave the pork to marinate for 30 minutes so it absorbs the flavors. Wash the horn chili and spring onions and chop them finely for garnish.

While waiting for the pork to absorb the seasonings, put a pan of oil on the stove; when the oil is hot, drop in the quail eggs and fry over medium heat.
