Today, STAVI office catering is no longer unfamiliar; it has even gradually become a household name. Putting together a menu for office catering, school catering and so on at STAVI is no easy task. Menu planning has to take many factors into account, in order to satisfy customers, including the most demanding and discerning ones.

1. Nutritious stir-fried chicken with mushrooms

Stir-fried chicken with mushrooms is an extremely nutritious dish for office catering; with this nutrient-rich dish you get protein, fibre and many vitamins all at once. This tasty chicken and mushroom dish is also easy to eat, never cloying, and quick to prepare.

To make stir-fried chicken with mushrooms, you can choose one of the following mushrooms: straw mushrooms, enoki, shiitake, king oyster mushrooms and so on. Cut the chicken into bite-sized pieces and marinate with fish sauce, seasoning powder, MSG and oyster sauce. When the chicken firms up, add the mushrooms and stir well, then adjust the seasoning once more to taste. Turn off the heat and garnish the dish with a little pepper, spring onion and coriander, and it is done.

2. Simple fried eggs

Fried eggs are always a familiar dish for many people; quick and simple to prepare, yet no less tasty and easy to eat in your office meal. You can fry eggs with a few accompanying ingredients such as bell peppers, minced meat, sausages (instant or premium packaged), carrots, and you can add shallots and spring onions to make the dish richer and more fragrant.

3. Super tasty braised shrimp with pickled vegetables

What could be better than enjoying a piping hot meal after a stressful day at work, with braised shrimp and pickled vegetables served alongside steaming white rice. This tasty shrimp dish has a rich flavour thanks to the combination of sweet, firm shrimp and crunchy pickled vegetables, creating a harmonious taste. The ingredients for braised shrimp with pickled vegetables are also very simple: just shrimp and pickled vegetables.

Clean the shrimp and rinse with water, remove the heads and peel, then marinate the shrimp with a little fish sauce, sugar and pepper. Wash and finely chop the garlic, shallots and chilli. Place a pan on the stove and add a little sugar to make a nice caramel colour; when it turns amber, add the shrimp and stir, season to taste and stir for about 4 minutes. Add the bowl of pickled vegetables and stir thoroughly, cover and simmer over low heat until the sauce thickens and the shrimp turns brown, and it is ready to enjoy. 

4. Tempting fish sauce fried chicken

Another dish that is “so delicious, so easy to make and so good for your health” is fish sauce fried chicken. Depending on your preference, you can choose wings or thighs to fry.

This lunch dish is also extremely simple to make. First, just wash the chicken wings/thighs in diluted salt water to remove any odour. Then deep-fry the chicken in plenty of oil and prepare the sauce (at a ratio of 1 spoon of fish sauce to 1 spoon of sugar). In the final step, fry the shallots until fragrant and add the chicken wings to the pan with the sauce so that the seasoning soaks evenly into the wings/thighs. Very simple and quick for an office meal, isn't it?

5. Delicious green mango salad

A delicious green mango and pig's ear salad will make your office meal richer and more appealing. This dish is a perfect combination of sour, salty, spicy and sweet flavours. It is well suited as an appetiser or side dish at small parties. The ingredients include pig's ear, green mango, carrot, herbs, coriander, Vietnamese coriander and peanuts.

Clean the pig's ear thoroughly with lime, then drain and boil it with a few slices of ginger and 2 spoons of rice vinegar. After removing it, put the pig's ear in the freezer for about 30 minutes, then take it out and slice thinly. Wash the green mango and keep the skin on so it stays crunchier after mixing, then shred it. Peel and julienne the carrot. Roast and coarsely crush the peanuts. Add the pig's ear, green mango, carrot and Vietnamese coriander in turn, mix well with the salad dressing and leave for 15 minutes so the green mango and pig's ear salad absorbs the seasoning, and the dish is complete.

6. Addictive sweet and sour pork ribs

When it comes to signature dishes to enjoy in every office meal, you cannot leave out sweet and sour pork ribs. Preparing this dish is extremely simple:

Step one, blanch the ribs in boiling water to clean them.

Next, make the sauce. The seasonings for the sauce include: 5 spoons of sugar, 5 spoons of vinegar, garlic, half a small bowl of water, fish sauce and chilli (if you like it spicy). If you have no vinegar, you can use tamarind juice instead. Simmer over low heat until the sauce turns dark red and thickens.

Step 3, fry the ribs in cooking oil, while frying shallots in another pan.

Step 4, after frying the ribs, add them to the hot sauce mixture and stir well. Continue cooking the sauce until the mixture thickens, then turn off the heat.

And so the sweet and sour pork ribs are done. With the sweet and sour taste of the sauce combined with tender, richly flavoured ribs, this dish deserves a place on the menu of delicious dishes to enjoy in your office meal.
