Step 1: Clean the ribs by blanching them in boiling water
Step 2: Make the sauce. The sauce ingredients are: 5 spoons of sugar, 5 spoons of vinegar, garlic, 6 spoons of water, fish sauce and chilli (if you like it spicy). If you have no vinegar at home, you can use tamarind juice instead. Put it on the stove and simmer over low heat until the sauce turns dark golden and thickens.
Step 3: Fry the ribs in cooking oil until golden, and at the same time finely chop shallots and fry them in another pan.
Step 4: After frying the ribs, add them to the hot caramel sauce mixture and stir well. Keep cooking the sauce until the mixture thickens, then turn off the heat.

4: Pork rib soup with pickled mustard greens
Prepare 200 grams of pork spare ribs, 200 grams of pickled mustard greens, 1 tomato, 50 grams of fresh herbs, 10 grams of ready-fried garlic and some basic cooking seasonings.
Wash the pork ribs and marinate them with seasoning powder, pepper and chopped shallots until absorbed. Then lightly fry them in a little cooking oil until the ribs are golden. Add about 300 ml of water to the pot and bring to the boil.

Note: If you use mustard greens that have been pickled for a long time, rinse them with water and squeeze them thoroughly so the soup is not too sour. It is best to stir-fry the ribs with seasonings before cooking so they are richer and more flavourful. This dish serves as both the savoury dish and the soup, so you do not need to prepare extra vegetables.

5: Fresh spring rolls with shrimp and pork
Boil 200 ml of water with two bruised lemongrass stalks. When the water boils, add the washed shrimp and blanch for about 2 minutes until just cooked, then remove. Peel the shrimp, cut them in half and place on a plate.
Boil another pot of water and cook the pork belly until done. Let the meat cool, then remove and cut into bite-sized pieces.
Moisten the rice paper and start making the rolls. Add your favourite herbs, shrimp, pork and just enough fresh rice vermicelli in turn, then roll up tightly.
