8. Sweet potato sticks
Wash the sweet potatoes, cut them into rounds and steam them. When cooked, divide the potatoes into 2 bowls, one for each type of sweet potato, then add 1 tablespoon of sugar, a pinch of salt and 10g of unsalted butter to each bowl.

Peel and wash the sweet potatoes and cut them into small pieces so they cook faster. Put all the cut potatoes in a pot and add water just enough to cover them. Place the pot on the stove and boil for 20 minutes over medium heat until the potatoes are soft.
Put the boiled potatoes in a blender with 200ml of the cooking water. Blend on high speed until the potato mixture is smooth and fine, then switch off. First, prepare a large basin. Add about 200g condensed milk, 2ml vanilla extract, 1/2 teaspoon of salt, 50g sugar and 400ml boiling water, and stir until all the ingredients are fully dissolved and blended together.

Next, add 220ml unsweetened fresh milk and stir well. Once the mixture starts to cool, add about 50g coconut milk powder and stir until dissolved. Pass the blended sweet potato through a sieve into the basin of milk mixture and mix everything together until the cream is smooth and silky.
To make the sweet potato mixture easier to sieve, add about 1 ladle of the milk mixture to it and stir until it thins out, which makes sieving easier.
