Ingredients for beef stir-fry with vegetables:

To make beef stir-fry with vegetables, you need to prepare all the following ingredients before cooking:

• Beef: 500g

• Red and green bell peppers: 1 of each

• Carrot: 1

• Broccoli: 200g

• Cauliflower: 200g

• Minced garlic: 1 tablespoon

• Minced ginger: 1/2 tablespoon

• Oyster sauce: 1 teaspoon

• Soy sauce: 1 teaspoon

• Cooking oil: 5 tablespoons

• Common seasonings: fish sauce, pepper, seasoning powder

How to choose fresh ingredients

For every dish to be fragrant, full-flavoured and appetising, choosing the ingredients is the key factor, often described as the "soul of the dish". Fresh vegetables that are not bruised or damaged not only keep their natural crispness and sweetness but also retain their valuable vitamins and minerals. Care at the selection stage helps create a dish that is both tasty and good for your health.

How to choose fresh bell peppers

Choose bell peppers that have just been picked, with a fresh stem and taut, glossy skin; they will be sweeter, crunchier and more flavourful when stir-fried.

Buy peppers with bright colours that feel firm and solid in the hand, with unscratched skin.

Do not buy bell peppers whose skin is wrinkled or discoloured. If they feel light and soft in the hand, they will spoil the flavour of the stir-fry.

How to choose fresh, crisp, sweet carrots

Prefer straight, evenly tapered carrots with a small top. Avoid carrots that are too large, as they tend to be woody in the middle, and do not buy carrots with many roots or cracks, as these are signs of an old carrot that is no longer sweet.

Choose fresh carrots with a deep, even orange colour, without dark patches or spots. The carrot should feel firm in the hand, not soft or wilted.

How to choose fresh broccoli and cauliflower

For cauliflower, choose heads that are ivory or creamy white, not yellowing, with no brown or black spots. The leaf stems should still be green, not darkened or mushy.

For broccoli, the colour must be a uniform fresh green, with no wilted or blackened parts or yellowing florets.

The head should feel firm in the hand, with tightly packed florets that are not loose or broken. Broccoli and cauliflower spoil very quickly; if you notice a pungent, sour or unusual smell, do not buy it under any circumstances.

How to cook beef stir-fry with vegetables

Follow the simple steps below to complete a fragrant, full-flavoured and nutritious beef stir-fry with vegetables for the whole family to enjoy.

Step 1. Prepare and marinate the beef:

To remove the beefy smell, after buying the meat, rinse it with ginger wine, then rinse it several times with clean water, drain and slice thinly into bite-sized pieces.

Marinate the beef with 1/2 teaspoon of seasoning powder, 1/2 teaspoon of soy sauce, 1 teaspoon of oyster sauce, 1/2 tablespoon of minced garlic, 1/2 tablespoon of minced ginger and 1/3 teaspoon of pepper. Mix well and let the meat absorb the seasonings for about 20 minutes.

Step 2. Prepare the vegetables:

Wash the broccoli, cauliflower, carrot and bell peppers, then cut them into bite-sized pieces. To make the plate of vegetables more attractive, you can carve the carrot into flower shapes and cut it into thin slices.

Step 3. Stir-fry the beef:

Place a pan on the stove and heat it with a little cooking oil, fry the remaining garlic until fragrant, then add the beef and stir-fry quickly over high heat for about 2–3 minutes until just cooked. Then transfer the meat to a separate plate.

Step 4. Stir-fry the vegetables:

Add 1 tablespoon of cooking oil to the pan and lower the heat to medium; when the oil is hot, add the broccoli, cauliflower and carrot, season with 1/2 teaspoon of seasoning powder and a dash of fish sauce for fragrance, and stir evenly for 3 minutes. Note: adjust the seasoning appropriately to avoid making it too salty.

Step 5. Stir-fry the vegetables with the beef

Return the stir-fried beef to the pan and toss with the vegetables for about 2 more minutes. Adjust the seasoning to taste, then turn off the heat.

Step 6. The finished dish:

Once finished, the mixed beef stir-fry has extremely appealing colours, with tender, flavourful beef combined with crisp, sweet, nutrient-packed vegetables. This is sure to be a dish that goes perfectly with rice and gives the whole family plenty of energy!
